New York, NY July 11, 2002-An article in the current issue of The Chronicle of Higher Education discusses the lack of nutrition supplied in college cafeterias and what is being done to correct the situation. According to the article, universities all over the United States are establishing kiosks that provide the dining-hall’s menus, their preparation methods, ingredients and nutritional information.
The article also states that cases of eating disorders and obesity are rising. Barnard College dietitian Maria Sorbara agrees that "the number of students seeking help for eating disorders is overwhelming," and that, " We are so bogged down with eating disorders, we don’t know what to do with ourselves."
To respond to these problems, colleges are establishing an "eating-disorder team" comprised of counselors, dietitians and nutritionists who can help students better understand the importance of taking care of their bodies at such an important time in the growth process.
